Menu:

Spicy Vegemince Tacos

Ingredients

1 tbspn corn oil

1 onion copped

1 chilli, very finely chopped

½ green pepper, chopped

1 garlic clove crrushed

225g tinned kidney beans

2 tomatoes, chopped

100ml vegetable stock

1 tbspn tomato puree

250g Realeat vegemince

50g frozen or canned sweetcorn

1 packet of ready-made Taco shells

tabasco sauce to taste

Method

1. Heat the oil in a pan

2. Add the onion and cook until transparent

3. Add the chilli, green pepper and garlic and cook for a further 2 minutes.

4. Add the beans, tomatoes, stock, tomato puree and the vegemince.

5. Cover, reduce the heat and simmer gently for 5 minutes.

6. Add sweetcorn, salt and pepper to taste.

7. Cover and cook for a further 5 minutes or until the mixture is cooked and thickened.

8. Fill warm tacos with the mixture and serve at once.
