Chicken style pieces and Cashew

Ingredients

2 tbspn vegetable oil

1 onion chopped

1 garlic clove chopped

2 tspn medium curry powder

1 tspn ground cumin

6 cloves

200g Realeat chicken style pieces

½ pint boiling water

Juice ½ a lemon

50g creamed coconut block grated

2 tspn tomato puree

1 tspn garam masala

2 tbspn chopped parsley.

Method

1. Gently fry the onion and garlic for 2-3 minutes before adding the spices. Add the Realeat chicken pieces and gently fry for a further 2-3 minutes ensuring that all the Chicken style pieces are lightly coated with the spices.

2. Add the creamed coconut to the boiling water, using a whisk, blend it to a creamy liquid (as per cooking instructions), then mix in the tomato puree and the lemon juice.

3. Stir the sauce in the pan and bring to the boil, reduce the heat and allow it to simmer for 10 -15 minutes.

4. Stir in the garam masala and parsley and remove from the heat.

5. Serve with basmati rice and/or naan bread.
