Chickenless curry
Ingredients
2tspn vegetable oil
1 onion chopped
1 garlic clove crushed
2tspn medium curry powder
1tspn ground cumin
6 cloves
200g Realeat chicken style pieces
½ pint boiling water
juice ½ lemon
50g creamed coconut block grated
2 tbspn tomato puree
1 tspn garam masala
2 tbspn chopped coriander
Method
1. Gently fry the onion and garlic for 2-3 minutes before adding the spices
2. Add the Realeat chicken style pieces and gently fry for a further 2-3 minutes ensuring that all the chicken style pieces are lightly coated with the spices.
3. Add the creamed coconut to the boiling water, using a whisk belnd it to a creamy liquid, then mix in the tomato puree and the lemon juice.
4. Stir the sauce into the pan and bring to the boil, reduce the heat and allow it to simmer for 10-15 minutes.
5. Stir in the garam masala and coriander and remove from the heat.
6. Serve with basmati rice.
