Spaghetti Bolognese
Ingredients
2 tbspn olive oil
1 large onion, chopped
1 bayleaf
2 cloves garlic
4 oz /100oz mushrooms chopped
handful of sundried tomatoes soaked and chopped
225g/80z veggie mince
2 tins of chopped tomatoes
1tbspn tomato puree
handful of fresh basil
freshly ground black pepper
grated cheezly or parmezano
pitted black olives, chopped in half
1 500gm packet spaghetti
Method
1. Heat the oil in a heavy bottomed pan, add the onion and fry gently for a couple of minutes.
2. Add the garlic, mushrooms and bay leaf and continue to fry until onion is softened.
3. Add sundried tomatoes and veggie mince and cook for a minute or two.
4. Add the chopped tomatoes and puree and simmer for fifteen minutes stirring often. Add the basil and black pepper near the end of cooking.
5. Bring a large pan of water to the boil and add the pasta and simmer for 8-10 minutes.
6. Serve the bolognese on a bed of cooked spaghetti and sprinkle over the cheezley or parmezano and black olives.
